Maple Syrup

Our Process

Our Federal Grove Maple Syrup is harvest in the winter months of January and February. Harvesting sap from a maple tree requires freezing temperatures during the night and following day; a temperature between twenty-five degrees and the mid-forties is optimal. 

At Federal Grove, we use an evaporation process in which the raw sap is boiled till the sugar content changes from a two percent to sixty-six percent concentration. By that point, the sap is considered syrup.

After the boiling process is complete, we take the syrup off the evaporator and put in another heating unit. The second heating takes the syrup back to one hundred and eighty degrees. Then the syrup is run through a high pressure filter press to remove any impurities. After that, it is ready to be bottled. To bottle syrup, a high heat must be preserved.

Our Federal Grove Maple Syrup is available seasonally in eight and twelve ounce bottles.

Annual Maple Syrup Festival

Join us during the last weekend in February, Friday through Sunday, for our Annual Federal Grove Maple Syrup Festival. The festival includes demonstrations, local artisan guests, and, of course, food. Dinner is served in evenings.
